Chicken Pineapple Kabobs by Chef Mom

Serves 8

Ingredients

  • 4 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 (15-ounce) can pineapple chunks, drained (reserve juice)
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 16 bamboo skewers, soaked in water for at least 30 minutes

Directions

  1. Preheat oven to 350 degrees F and spray a baking sheet with cooking spray.
  2. Meanwhile, place chicken and pineapple chunks in a large bowl.
  3. In a small bowl, whisk together 1/2 cup of reserved pineapple juice, honey, soy sauce and oil. Pour honey mixture over chicken mixture and toss to coat well. Marinate for at least 30 minutes.
  4. Thread chicken and pineapple onto skewers and brush with any remaining marinade.
  5. Bake for 20 minutes or until chicken is cooked through.

  • 12 ounces 90%-lean ground beef
  • 1 large onion, finely diced
  • 2 cups finely chopped cremini mushrooms, (about 4 ounces)
  • 5 plum tomatoes, diced
  • 2 tablespoons all-purpose flour
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 1/4 cup chili sauce, such as Heinz
  • 1/4 cup ketchup
  • 8 whole-wheat hamburger buns, toasted if desired

Directions

  1. Crumble beef into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute. Add onion and mushrooms and cook, stirring occasionally, breaking up the meat with a wooden spoon, until the vegetables are soft and the moisture has evaporated, 8 to 10 minutes.
  2. Add tomatoes and flour; stir to combine. Stir in water, vinegar, chili sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8 to 10 minutes. Serve warm on buns.

  • 1/4 cup peanut butter
  • 1-1/2 teaspoons honey
  • 1/2 cup miniature semisweet chocolate chips
  • 2 tablespoons raisins
  • 4 medium unpeeled Red Delicious apples, cored

Directions

  • In a small bowl, combine peanut butter and honey; fold in chocolate chips and raisins.
  • Fill centers of apples with peanut butter mixture; refrigerate for at least 1 hour. Cut into 1/4-in. rings. Yield: about 2 dozen.
